Asparagus Soup and Pansies

Hallelujah, we’ve nearly made it to spring, and with the weather so consistently mild, I planted pansies today! This is Viola Blue Moon that I bought last fall from White Flower Farm in Litchfield, Connecticut, and have grown under lights all winter.

What a pretty face on this one. I see a butterfly in those petals.

Remember the pots of bulbs in my refrigerator over the winter? Come March: Daffodil Ceylon and the black Tulip Paul Scherer!

Here are the pansies I grew from seed in January. Healthy but not flowering yet.

Asparagus Soup

Come spring, the produce starts getting really tasty and cooking is a cinch because the food doesn’t need much embellishment.

That is certainly true of this soup. The key is to wait till the gorgeous fresh stalks of asparagus start to appear in the grocery store. The flavor of the soup is dependent on the quality of the asparagus.

2 large Onions chopped
4 tablespoons Sweet Butter
1 32 oz container Chicken Stock (I use Imagine brand)
2 bunches Asparagus (about 2 pounds)
2 tablespoons low fat Sour Cream ( feeling indulgent – heavy cream)
1 teaspoon Salt
1/2 teaspoon freshly ground Pepper

1. While melting the butter in your favorite soup pot, chop up the 2 onions and saute in your pot on very low heat for about 25 minutes.
2. Add the chicken stock and asparagus that you’ve chopped into 1 inch pieces, disposing of the woody stems.
3. Simmer the soup very gently for 30 minutes with the lid on. Then turn it off until you’re almost ready to serve.
4. With a hand held blender, blend the soup, but leave it a little chunky. I think the texture is more interesting.
5. Blend in 2 tablespoons of sour cream and adjust seasonings.
6. Heat and Voila!

More than any other season, the gifts of spring are ever so fleeting and ephemeral.
All the scents, all the sounds, all the color – so much beauty.

I love spring.
I love the bulbs.
I love the peepers and their nightly concert.
I love the vibrant limey green of the leaves on the trees as they emerge, perfect as a newborn baby.
I love the dogs crazy with spring fever.
I love the bird song.
I love spring.

It’s a gift.
